HWFD? - Fish Chowder
Just in time for another Lenten Friday...
Fish Chowder
(from my dear Granny)
1-2 Tbsp butter
1 medium onion, diced
Salt & pepper, to taste
3-4 medium potatoes, diced
1-2 lbs. Cod fish filets, cut into chunks (I usually use 1.5 - 1.75 lbs)
1-2 cups Milk or Heavy cream (I used coconut milk, unsweetened)
Saute onion in butter in large dutch oven until onion is translucent. Add salt & pepper. Add potatoes and stir. Add chopped fish filets. Add milk until it almost reaches the level of the fish and potatoes. Cook on medium/low for about 20-30 minutes - use a temperature so that the broth is gently bubbling. Keep an eye on it to make sure it's not too hot--it will very quickly boil over! Stir frequently--I recommend using a non-stick dutch oven so it doesn't burn. Once cooked, mash in pot with a potato masher to achieve desired texture.
I've never frozen the leftovers, but they keep nicely in the fridge for a few days. Reheat on the stove so the fish doesn't get rubbery.

Cook: 30 minutes
